Ingredients:
Mushroom
Onions
Multi grain bread - toasted
Jaggery or brown sugar
Garlic
Butter
Chilli paste
Soy
Chilli oil
Preparation:
1. Slice up the mushrooms, chop the peeled garlic and slice the onions
2. In a pre-heated non-stick pan add 1 tablespoon oil, 1 tablespoon butter and 2 tablespoons jaggery and let it melt
3. Once this mix is golden, add sliced onions, salt, 3-4 tablespoons of water and stir
4. Cook the onions for 10 minutes until they turn golden and soft
5. In another pan add a tablespoon of butter, 1 tablespoon of oil and 2 tablespoons garlic and brown this well
6. Add mushrooms, salt, pepper to this and cook on high flame (chilli is optional)
7. Add 1 tablespoon chilli paste, 1/2 tablespoon chilli oil and 1 tablespoon soy sauce to the mushrooms
8. Take the toasted slice of bread and layer it up starting with the caramelised onions followed by spicy garlic soy mushrooms
9. You can add salsa, grated cheese and basil leaves to this
Note: You can store the caramelised onions refrigerated in a jar and they can be used with multiple dishes.
