HEALTHY RECIPES: CAULIFLOWER PIZZA

Ingredients:

2 big Cauliflowers

1 egg

1/2 cup Goat cheese

 

Toppings:

Basil pesto

Basil leaves

Pine nuts

Sun-dried tomatoes

Parmesan cheese (grated)

Preparation:

1. Cut the cauliflower into medium-sized chunks and put them in a blender until you get a rice-like texture

2. Put the riced cauliflower in a muslin cloth and hang it for about 30 minutes until the excess water drains out

3. Whip an egg and add it to the drained cauliflower, along with the goat cheese and some seasoning

4. Knead the dough and add it onto the baking tray over parchment paper in the form of balls (medium-large size)

5. Flatten these balls individually using a spatula making sure the outer edges are thicker so they bake better

6. Let them bake for 30 minutes at 200 degrees celsius, flip after

7. Take them out once it's crisp and looks golden

Note: Add pesto, parmesan cheese, basil leaves and sun-dried tomatoes to this and serve (or whatever toppings you like)
